1,2,3,...10 Salads!
So here we are, after yet another lovely summer by the sea. Since I am trying to correct the vacational excesses limiting carbs and going through my salad "repertoire", I thought I´d share some tried and tested recipes with you. Hope you try making some them, let me know what you think!

Estoy intentando compensar los excesos vacacionales, limitando los hidratos y tirando mucho de mi repertorio de ensaladas, y pensé que podía compartir algunas de mis recetas. Espero que os animéis a probar alguna, me contáis qué tal os parecen!
1. Roasted Vegetable and Shrimp Salad
This recipe is great for my no-carb meals. Υou roast the veγetables with the shrimp in the oven with a few spices and put them on salad leaves. Delicious!
2. Brussel Sprout Salad
I was really curious to try this salad, made with shaved raw brussel sprouts. It´s excellent! It has cranberries and bacon, an orange dressing, you can add goat cheese, and I really liked the taste of raw brussel sprouts. A whole meal in itself.

4. Tomato, Green and Red Pepper, Tuna, and Feta Salad
No link here, I made this one up 😉 Dressed with vinegar and olive oil, I also like a good dash of ground black pepper and oregano on top. Light and fresh for a summer night.
5. Caprese Salad
This has to be the simplest salad in the world but if the ingredients are good, it´s one of the yummiest dishes ever. Really worth watching this video of Gennaro Contaldo (Jamie Oliver's teacher and colleague, his approach to making the salad is inspirational )😄🍅

I love my tuna and I love my eggs, not to mention black olives, so this is a pretty complete dish for me, it´s a great filling lunch or dinner.

7. Black-eyed Bean Salad
I have discovered bean, lentil, and chick pea salads in the last few years and I find them delicious and very filling. In Greece they are popular around Easter time, when people traditionally fasted for Lent and it is a good meat-free option. This one is made with black eyed beans (alubia carilla o de ojo negro, τα μαυροματικα, κοινώς). This one has fresh onion, red pepper, Kalamata olives, feta and parsley. Lemon and olive oil.

8. Seared Scallop and Asparagus Salad
Exactly that: seared scallops and asparagus on a bed of mixed greens and tomatoes. Balsamic dressing with slices of pan-browned garlic. 😋

9. Steak, Sundried Tomatoes and Parmesan Salad
The concept of steak on salad is new to me. It actually makes sense, instead of having steak and salad on the side, you incorporate it in the salad 😏 The link gives you 40 (!) recipes for steak salad. This one I made with what I had at the moment: cherry tomatoes, fresh onion, sundried tomatoes, grated parmesan dressed with balsamic vinegar and olive oil.
10. Winter "salad"
You might not know or remember this but fruit and vegetables used to be seasonal. And broccoli, carrots and cauliflower are (were) winter vegetables. Actually, growing up in Greece there were no tomatoes in winter, and instead of a green salad we had vegetables such as these or shredded raw cabbage salads. This is from Sofia Skoufa´s book which I highly recommend to my Greek friends.
The dressing to these boiled vegetables is made with mustard, greek yoghurt, olive oil, lemon juice, salt and pepper.
Bonus: Greek Salad
Not much to say here 😍 This one is the one and only real Greek salad, everything else is a variatiom. As you can imagine it is not called "greek" salad in Greece, but "horiatiki", which more or less means "rustic". Tomatoes, cucumbers, onion, green pepper (optional), feta cheese, black (Greek) olives, oregano, salt, pepper, vinegar and olive oil. "There you go".
